Steve Willoqueaux souhaite que sa bi\u00e8re devienne une r\u00e9f\u00e9rence locale sur le territoire.<\/h2>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Nostradamousse<\/strong> est la nouvelle brasserie <strong>montvaloise<\/strong> et les pr\u00e9dictions s\u2019annoncent id\u00e9ales. Originaire de Lille mais install\u00e9 depuis quelques ann\u00e9es sur le territoire, <strong>Steve Willoqueaux<\/strong>, 56 ans, vient d\u2019ouvrir sa brasserie appel\u00e9e Nostradamousse, et produit des <strong>bi\u00e8res locales et artisanales<\/strong>.<\/p>\n<p>&nbsp;<\/p>\n<h3><strong>Un cadeau de No\u00ebl<\/strong><\/h3>\n<p>Cuisinier de formation, Steve Willoqueaux est arriv\u00e9 dans la <strong>Sarthe<\/strong> en tant qu\u2019\u00e9ducateur au<strong> lyc\u00e9e Nazareth de Ruill\u00e9-sur-Loir.<\/strong> L\u2019amateur de bi\u00e8res a \u00e9galement \u00e9t\u00e9 agriculteur bio mara\u00eecher mais aussi animateur et technicien radio. Mais c\u2019est tout simplement un cadeau offert \u00e0 No\u00ebl qui le guidera vers sa nouvelle aventure\u00a0: devenir <strong>brasseur<\/strong>. \u00ab\u00a0On m\u2019a offert un kit de brassage de bi\u00e8res de cinq litres il y a deux ans\u00a0\u00bb, introduit le nouveau g\u00e9rant. Soif d\u2019apprentissage, il a par la suite achet\u00e9 un kit de 25 litres\u00a0: \u00ab\u00a0J\u2019ai rencontr\u00e9 un r\u00e9el succ\u00e8s aupr\u00e8s de mes amis, et j\u2019ai vraiment appr\u00e9ci\u00e9 faire du brassage. J\u2019ai donc voulu en faire mon m\u00e9tier\u00a0\u00bb. Passant des heures et des heures sur Internet afin d\u2019en apprendre toujours plus sur ce m\u00e9tier, il brasse en tant qu\u2019amateur depuis deux ans\u00a0:<\/p>\n<blockquote><p>\u00ab\u00a0C\u2019est un projet qui se concr\u00e9tise depuis plus d\u2019un an. J\u2019ai \u00e9galement d\u00e9cid\u00e9 de passer une formation professionnalisante en juillet dernier afin de ma\u00eetriser d\u2019autant plus les outils et les termes anglo-saxons\u00a0\u00bb, compl\u00e8te-t-il.<\/p><\/blockquote>\n<p>&nbsp;<\/p>\n<h3><strong>Une installation en mars<\/strong><\/h3>\n<p>Une fois les comp\u00e9tences acquises, Steve Willoqueaux commence son installation en mars 2022, dans les locaux de l\u2019<strong>ex zone Harman \u00e0 Ch\u00e2teau-du-Loir<\/strong>. \u00ab\u00a0J\u2019ai ouvert ma soci\u00e9t\u00e9 et effectu\u00e9 quatre mois de travaux. Je suis actuellement en production depuis un mois\u00a0\u00bb, continue le g\u00e9rant de Nostradamousse.<\/p>\n<p>Dans ses locaux, Steve poss\u00e8de <strong>quatre fermenteurs de 600 litres chacun<\/strong>, et deux plus petits pour confectionner de la bi\u00e8re sur mesure. Il envisage de produire <strong>300 hectolitres \u00e0 l\u2019ann\u00e9e<\/strong>. Dans une optique de privil\u00e9gier les <strong>fournisseurs fran\u00e7ais, belges et n\u00e9erlandais<\/strong>, Steve Willoqueaux confectionnera un brassage tout grain :<\/p>\n<blockquote><p>\u00ab Je brasse \u00e0 base d\u2019orge malt\u00e9e. Je pars du principe que je vais brasser que des bi\u00e8res que j\u2019aime, comme la bi\u00e8re s\u00e8che et la blonde \u00bb.<\/p><\/blockquote>\n<p>&nbsp;<\/p>\n<h3><strong>Plusieurs gammes et sur demande<\/strong><\/h3>\n<p>Steve Willoqueaux compte brasser plusieurs types de bi\u00e8res\u00a0: la<strong> bi\u00e8re ambr\u00e9e toast\u00e9e<\/strong> travaill\u00e9e comme une blonde s\u00e8che\u00a0; la <strong>Hard Seltzer,<\/strong> ou encore la <strong>Neipa<\/strong>, une bi\u00e8re peu am\u00e8re avec des ar\u00f4mes floraux du houblon. \u00ab Mes deux petits fermenteurs me serviront pour les bi\u00e8res sur demande, comme des plus aromatiques, plus \u00e9labor\u00e9es \u00bb, assure le brasseur. De plus, l\u2019ancien \u00e9ducateur compte pr\u00e9senter deux bi\u00e8res, l\u2019une issue de jus de pomme et l\u2019autre de raisins :<\/p>\n<blockquote><p>\u00ab Je pr\u00e9parerai des bi\u00e8res \u00e0 base de jus de pomme, originaire du territoire, mais aussi de raisins puisque je poss\u00e8de des vignes centenaires. Je ferai des infusions avec le raisin pour avoir plusieurs agrumes \u00bb.<\/p><\/blockquote>\n<p>Le g\u00e9rant ne souhaite pas ouvrir de boutique sur place et privil\u00e9gie les distributeurs\u00a0:<\/p>\n<blockquote><p>\u00ab\u00a0Je vendrai mes bi\u00e8res vers la grande distribution et les petits distributeurs, comme les caf\u00e9s, restaurants, et m\u00eame pourquoi pas les associations. Je ne ferai pas de boutique sur place, mais que du drive. Les clients pourront venir directement \u00e0 la brasserie\u00a0\u00bb.<\/p><\/blockquote>\n<p>&nbsp;<\/p>\n<h3><strong>Comme un chimiste<\/strong><\/h3>\n<p>Outre ses six fermenteurs, Steve Willoqueaux poss\u00e8de un espace cuisine o\u00f9 le malt subit divers transformations comme le concassage et l\u2019emp\u00e2tage. \u00a0Espace de libert\u00e9 et de cr\u00e9ativit\u00e9, le brasseur choisi ses ingr\u00e9dients, son mat\u00e9riel, ses proc\u00e9d\u00e9s, afin mettre au point de nouvelles recettes :<\/p>\n<blockquote><p>\u00ab\u00a0J\u2019ai gard\u00e9 mon ancien mat\u00e9riel d\u2019amateur pour continuer \u00e0 faire des essais. Je me sens comme un chimiste, j\u2019ai la plus belle bo\u00eete \u00e0 outils que je n\u2019ai jamais eu\u00a0\u00bb, confie Steve Willoqueaux.<\/p><\/blockquote>\n<p>Les bi\u00e8res de Nostradamousse seront \u00e0 d\u00e9guster lors d\u2019un premier lancement au sein de l\u2019<strong>enseigne Leclerc de Montval-sur-Loir les 8 et 9 octobre prochain<\/strong>.
